Pumpkin Spice Cookies

The grocery store finally had canned pumpkin! These cookies were on our list for Cookie Friday but had to be put on hold until we could get some pumpkin. The entire summer there was not one can of pumpkin on the shelves of our local grocery store! My sister told me this was because last year there was a pumpkin shortage. I don't know if this is true but it makes sense.
The pumpkin couldn't have been put on the shelves at a better time because there is a serious chill in the air. It feels as though Autumn may be arriving early. And baking with and eating pumpkins is an Autumn thing, don't you think?
These are very easy to make, very moist, and super duper delicious.
