Vegetable Quesadillas

The recipe calls for mushrooms, red onion, a hot pepper of your choice.  we chose poblano, and chorizo sausage.  Because this is Meatless Monday we eliminated the choriso sausage.

We love this cookbook!  We haven't been disappointed yet!

  

For toppings we had black olives, salsa, and guacamole.

Because the kids love quesadillas, dinner was quite pleasant.  No whining and complaining,  and every last piece was eaten!  A successful Meatless Monday.
